Method
Preparing the Salad Base

Wash and Chop Romaine
Rinse the romaine lettuce under cold water. Shake off excess water and chop it into bite-sized pieces. Place the chopped romaine in a large salad bowl.

Add Parmesan
Sprinkle the shaved Parmesan cheese over the chopped romaine lettuce in the bowl.
Making the Croutons

Prepare the Focaccia
Preheat your oven to 375°F (190°C). Cut the focaccia bread into small cubes.

Season and Bake Croutons
In a mixing bowl, toss the focaccia cubes with olive oil, garlic powder, salt, and black pepper. Spread the seasoned cubes on a baking sheet in a single layer. Bake for about 10-15 minutes, or until golden brown and crispy, stirring halfway through for even cooking.

Mix the Dressing
In a bowl, whisk together mayonnaise, lemon juice, anchovy paste, Worcestershire sauce, minced garlic, salt, and black pepper until smooth and well-combined.
Assembling the Salad

Combine and Serve
Once the croutons have cooled slightly, add them to the bowl with the romaine and Parmesan. If using dressing, drizzle it over the salad and toss gently to combine. Serve immediately.
