Prepare Slow-Roasted Tomatoes

    Roast the Tomatoes

    Preheat your oven to 300°F (150°C). Slice the Roma tomatoes in half and place them cut side up on a baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, and dried oregano.

    Bake

    Bake in the preheated oven for about 2 hours, or until the tomatoes are soft and slightly caramelized. Remove from oven and let them cool.

Prepare Avocado Spread

    Mash Avocado

    In a bowl, cut the avocados in half, remove the pit, and scoop the flesh into the bowl. Add lemon juice, salt, and black pepper.

    Mash the avocado mixture with a fork until creamy but still chunky. Set aside.

Toast the Bread

    Toast the 7-grain bread slices in a toaster or on a grill until golden brown and crispy.

Assemble Toast

    Spread a generous layer of the avocado mixture onto each slice of toasted bread. Top with slow-roasted tomatoes, a piece of burrata cheese, and a handful of arugula.
