Buffalo Chicken

Prepare the Chicken
Cut the chicken breasts into bite-sized pieces and season with salt and black pepper.

Bread the Chicken
In a bowl, mix flour with additional salt and pepper. In another bowl, whisk together the eggs and buttermilk. Dip chicken pieces in the flour, then in the egg mixture, and back in the flour.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium heat. Fry the chicken pieces in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

Toss in Buffalo Sauce
In a large bowl, toss the fried chicken with Buffalo sauce until well coated.

Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

Mix Wet Ingredients
In another bowl, combine eggs, buttermilk, and melted butter. Mix until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Cook the Waffles
Preheat a waffle iron. Pour the batter onto the center of the preheated waffle iron and cook according to manufacturer instructions until golden brown.

Chill the Butter
Transfer the mixture to a piece of plastic wrap, roll into a log shape, and refrigerate until firm.
