Chicken

Method

Preparing the Chicken

  1. 1

    Season the Chicken

Pat the whole chicken dry with paper towels. Rub the salt, black pepper, garlic powder, and paprika all over the chicken, including inside the cavity.

  2. 2

    Prepare for Rotisserie

Truss the chicken's legs with kitchen twine and tuck the wing tips under the chicken to prevent burning.

Making Joe's BBQ Sauce

  1. 3

    Combine Ingredients

In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.

  2. 4

    Cook the Sauce

Heat the saucepan over medium heat and bring the mixture to a simmer. Reduce heat to low and let it cook for about 15 minutes, stirring occasionally until thickened.

Cooking the Chicken

  1. 5

    Preheat the Rotisserie

Preheat your rotisserie grill according to the manufacturer's instructions.

  2. 6

    Cook the Chicken

Place the seasoned chicken onto the rotisserie spit and secure it tightly. Cook the chicken on the rotisserie for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (75°C).

  3. 7

    Baste with BBQ Sauce

During the last 20 minutes of cooking, baste the chicken with Joe's BBQ sauce every 5 minutes for a sticky glaze.

Serving

  1. 8

    Rest and Serve

Once cooked, carefully remove the chicken from the rotisserie. Let it rest for 10 minutes before carving. Serve with extra BBQ sauce on the side.
