Avocado Benedict Components Preparation

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 10-15 minutes, or until fork-tender. Drain and set aside.

    Toast the Bread

    While the potatoes are cooking, toast the 7-grain bread slices until golden brown in a toaster or on a skillet.

    Prepare the Avocado

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, adding salt and pepper to taste.

    Prepare the Slow-Roasted Tomatoes

    If your tomatoes are not already roasted, slice them in half, drizzle with olive oil, salt, and pepper, and roast in an oven at 300°F (150°C) for 2-3 hours until they are soft and caramelized.

Everything Seasoned Hollandaise Preparation

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and allow to cool slightly.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks, lemon juice, and Dijon mustard until pale and slightly thickened.

    Combine and Cook

    Place the bowl over a pot of simmering water (double boiler method). Gradually whisk in the melted butter until the mixture thickens and becomes creamy.

    Season the Hollandaise

    Remove from heat and stir in the everything bagel seasoning, salt, and black pepper to taste.

Assembly

    Assemble the Dish

    On each slice of toasted 7-grain bread, spread a layer of mashed avocado. Top with a few slow-roasted tomatoes and a generous drizzle of the everything seasoned hollandaise.

    Serve with Potatoes

    Serve the avocado benedict with a side of the boiled potatoes, seasoned with salt and pepper.
