Prepare the Tartar Sauce

    Make the Caper-Dill Tartar Sauce

    In a bowl, combine the mayonnaise, chopped dill pickles, capers, fresh dill, and lemon juice. Mix well and season with salt and pepper to taste. Refrigerate until ready to serve.

Prepare the Cod

    Season the Cod

    Pat the Atlantic cod fillets dry with paper towels. Season both sides with salt, pepper, and blackening seasoning.

    Heat olive oil in a skillet over medium-high heat. Add the seasoned cod fillets and cook for 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork. Remove from heat.

Assemble the Sandwich

    On each bun, layer lettuce leaves first, followed by a piece of cooked cod, slices of tomato, and rings of red onion. Spread a generous amount of the caper-dill tartar sauce on top.
