Make the Caper-Dill Tartar Sauce
In a medium bowl, combine the mayonnaise, dill pickles, fresh dill, capers, and lemon juice. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste. Cover and refrigerate until ready to use.

Prepare the Vegetables
Wash the romaine lettuce and pat dry. Tear the lettuce into pieces or leave whole depending on preference. Slice the tomato into thick rounds and thinly slice the red onion. Set aside.
Cooking the Cod

Cook the Cod
Preheat your grill or skillet over medium-high heat. Pat the Atlantic cod fillets dry with paper towels. Brush each fillet with olive oil and season generously with blackening seasoning on both sides. Grill or fry the cod for about 4-5 minutes per side or until the fish is cooked through and has a nice char. Remove from heat.
Assembling the Dish

Build the Dish
On each plate, create a bed of romaine lettuce, then place a piece of grilled or fried cod on top. Add slices of tomato and red onion on the side. Serve with a generous dollop of the caper-dill tartar sauce on top or on the side.
