Preparation

    Prepare the Turkey

    Start by rinsing the turkey breast under cold water and patting it dry with paper towels.

    Season the Turkey

    In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the turkey breast, ensuring it's evenly coated. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Turkey

    Place the soaked wood chips in the smoker box or wrap them in aluminum foil and poke holes in it. Place the marinated turkey breast on the smoker rack and smoke for about 3 to 4 hours or until the internal temperature reaches 165°F (74°C).

    Rest and Serve

    Once cooked, remove the turkey from the smoker and let it rest for 15 minutes before slicing. Serve with your choice of Original BBQ sauce or Morgan Co. White sauce.
