Prepare the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and add flavor.

Mix the Dry Ingredients
In a large bowl, combine cornmeal, flour, Cajun seasoning, salt, and black pepper.

Coat the Catfish
Remove catfish from buttermilk, allowing excess to drip off. Dredge fillets in the cornmeal mixture, ensuring an even coating.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil, frying for about 5-7 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove fried catfish from the oil and drain on paper towels. Serve hot with tartar sauce on the side.
