Slice the large onions into 1/2 inch thick rings. Separate the rings and set aside.

Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the buttermilk, mixing until smooth.

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, then coat with bread crumbs.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully place the coated onion rings in the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side.
