Cooking the Pasta

Cook the Macaroni
Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.
Making the Cheese Sauce

Prepare the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, cooking until the mixture thickens. Remove from heat and stir in the cheddar and cream cheese until melted and smooth. Season with salt and pepper.
Combining and Topping

Combine Ingredients
In a large bowl, combine the cooked macaroni with the cheese sauce until well coated. Transfer to a baking dish.

Add Toppings
Top the mac & cheese with barbecue pork (or beef brisket) and chopped scallions.

Bake
Preheat the oven to 350°F (175°C). Bake for 20-25 minutes until bubbly and golden on top.
