Bake the Potatoes
Preheat your oven to 425°F (220°C). Scrub the potatoes under running water and dry them thoroughly. Prick the potatoes several times with a fork, then rub them with olive oil, salt, and pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until they are tender and can be easily pierced with a fork.

Prepare Toppings
While the potatoes are baking, prepare your toppings. Cook the bacon until crispy and crumble it. Shred the cheese, chop the scallions, and heat the smoked meat if necessary.

Assemble the Loaded Baker
Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently fluff the insides with a fork. Add a tablespoon of butter to each potato, then layer on the smoked meat, crumbled bacon, shredded cheddar cheese, chopped scallions, sour cream, and drizzle with barbecue sauce.
