Prepare the Brisket
Start by trimming any excess fat from the brisket, leaving about a quarter-inch layer for flavor.

Season the Brisket
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this mixture evenly over the brisket, ensuring it gets into all the crevices. Let it sit at room temperature for about 30 minutes.

Smoke the Brisket
Place the brisket in the smoker, fat side up. Add the soaked wood chips and smoke for about 12 hours, or until the internal temperature reaches 195°F (90°C).

Rest the Brisket
Once cooked, remove the brisket from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes before slicing.

Serve
Slice the brisket against the grain and serve with beef broth on the side. Chopped brisket is available upon request.
