Prepare the Marinade
In a medium bowl, combine soy sauce, brown sugar, garlic powder, onion powder, black pepper, smoked paprika, liquid smoke, and olive oil. Whisk together until the sugar is dissolved and the marinade is well blended.

Marinate the Brisket
Place the brisket in a 1-gallon ziplock freezer bag. Pour the marinade over the brisket, ensuring it is fully coated. Seal the bag, removing as much air as possible. Massage the marinade into the brisket through the bag. Refrigerate for at least 4 hours, preferably overnight for best flavor.

Cook the Brisket
Remove brisket from the marinade and discard the marinade. Place the brisket on the grill or in the oven. Cook low and slow for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

Rest the Brisket
Once cooked, remove the brisket from the heat and let it rest for at least 30 minutes before slicing. This allows the juices to redistribute and ensures a tender result.
