Preparation of Vegetables

1. Shred the Cabbage

Remove the outer leaves of the red cabbage, cut it into quarters, and shred it finely using a sharp knife or a mandoline. Place the shredded cabbage in a large mixing bowl.

2. Grate the Carrot

Peel the carrot and use a grater to shred it into fine pieces. Add the grated carrot to the bowl with the cabbage.

3. Chop the Red Bell Pepper

Remove the stem and seeds from the red bell pepper. Chop it into small pieces and add it to the bowl.

Making the Dressing

4. Combine Dressing Ingredients

In a separate bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and black pepper until well combined and emulsified.

Mixing and Serving

5. Mix the Slaw

Pour the dressing over the shredded vegetables in the large mixing bowl. Toss everything together until the vegetables are evenly coated with the dressing.

6. Garnish (Optional)

If desired, sprinkle chopped parsley and chopped scallions over the slaw for added flavor and color.

7. Chill and Serve
