Base Preparation

    Prepare the Crust

    In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

    Form the Base

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even base. Use the back of a measuring cup for a smooth finish.

    Bake the Crust

    Preheat the oven to 350°F (175°C) and bake the crust for 10 minutes. Remove and allow to cool.

Filling Preparation

    Mix the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until fully combined.

    Add Flavorings

    Stir in the vanilla extract and sour cream until the mixture is creamy and well blended.

    Fill the Base

    Pour the cream cheese filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the cheesecake at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let it cool inside with the door ajar for 1 hour.

Topping Preparation

    Prepare the Ganache

    In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the dark chocolate chips. Stir until smooth and glossy.

    Top the Cheesecake

    Pour the chocolate ganache over the cooled cheesecake, spreading it evenly across the top. If desired, sprinkle with chopped nuts.

    Refrigerate the cheesecake for at least 4 hours or overnight before serving. Carefully release the sides of the springform pan and slice into wedges.
