Preparation of Beans

    Soak the Beans

    In a large bowl, combine the dried navy beans with 4 cups of water. Let them soak overnight, or for at least 8 hours, to soften.

    Drain and Rinse

    After soaking, drain the beans and rinse them under cold water. Set them aside.

Preparing the Pork Belly

    Season the Pork Belly

    Cut the pork belly into small cubes. In a mixing bowl, combine the smoked paprika, brown sugar, salt, and black pepper. Toss the pork belly cubes in the spice mixture until evenly coated.

    Cook the Pork Belly

    In a large skillet over medium heat, add the seasoned pork belly cubes. Cook until browned and crispy, about 10-12 minutes. Remove from heat and set aside.

Making the Sauce

    Sauté the Aromatics

    In the same skillet used for the pork belly, add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Add the tomato sauce, molasses, apple cider vinegar, mustard, Worcestershire sauce, ground cumin, and blackstrap molasses to the skillet. Stir to combine and let simmer for about 5 minutes.

Bringing it All Together

    In a large pot or Dutch oven, combine the soaked beans, cooked pork belly, and the sauce mixture. Stir well.

    Cover the pot with a lid and place it in a preheated oven at 300°F (150°C). Bake for about 2 hours, or until the beans are tender and the flavors meld together.

Finishing Touches
