Potato Preparation

Method

Potato Preparation

  1. 1

    Wash and Cut Potatoes

Wash the Russet potatoes thoroughly under cold running water to remove any dirt. Pat them dry with a clean towel. Cut each potato into even strips about 1/4 inch thick, ensuring uniformity for even cooking.

  2. 2

    Soak Potatoes

Soak the cut potatoes in a large bowl of cold water for at least 30 minutes. This step helps to remove excess starch and makes for crispier fries.

  3. 3

    Drain and Dry Potatoes

After soaking, drain the potatoes and rinse them under cold water again. Spread them out on a clean kitchen towel or paper towels and pat them dry thoroughly. Removing moisture is key to achieving crispiness.

Frying

  1. 4

    Heat Oil

In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature for frying.

  2. 5

    Fry Potatoes

Carefully add a batch of dried potato strips to the hot oil, ensuring not to overcrowd the pot. Fry them for about 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove the fries from the oil.

  3. 6

    Drain and Season

Transfer the fried potatoes to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle them with salt, paprika, garlic powder, and black pepper to taste. Toss to ensure even coating.
