Meat Preparation

Prepare the Meats
Choose any three of the meats: brisket, ribs, pulled pork, sausage, or chicken. Season them generously with your favorite rub or marinade. Allow them to marinate for at least 30 minutes.

Cooking the Meats
For brisket, smoke it at 225°F for about 1.5 hours per pound until it reaches an internal temperature of 195°F. For ribs, cook them for around 4 hours at the same temperature, wrapping them in foil after the first 2 hours. Pulled pork should be cooked similarly to brisket, until it pulls apart easily. Sausage can be grilled or smoked until the internal temperature reaches 160°F. Chicken should be cooked until it reaches 165°F, either grilled or roasted.

Make the Coleslaw
In a large bowl, combine 2 cups of shredded cabbage, 1 cup of shredded carrots, 1/2 cup of mayonnaise, 1 tablespoon of apple cider vinegar, 1 tablespoon of sugar, salt, and pepper to taste. Mix well and refrigerate for at least 15 minutes before serving.

Plate the Dish
Slice or chop the cooked meats into serving portions. Arrange them on a large platter along with a generous serving of coleslaw on the side. Offer additional sauces if desired.
