Preparation of Ribs

Season the Ribs
In a large bowl, combine salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub this spice mixture all over the boneless pork spare ribs. Let them rest for at least 30 minutes to absorb the flavors.

Make the God Sauce
In a medium saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well and bring to a simmer. Reduce heat and let it simmer for about 15 minutes until slightly thickened.
Assembling the Sandwich

Slice the Ribs
Once the ribs are done smoking, remove them from the smoker and let them rest for 10 minutes. Then, slice them into pieces suitable for the sandwich.

Assemble the Sandwich
On the bottom half of each hamburger bun, place a portion of the sliced ribs. Generously drizzle the God sauce over the ribs, then add sliced pickles and onions on top. Place the top half of the bun on the sandwich.

Serve
Serve the McRib sandwiches warm with extra God sauce on the side for dipping.
