    Prepare the Casings

    Soak hog casings in cold water for at least 30 minutes. Rinse thoroughly and keep in fresh water until ready to use.

    Mix the Meats and Seasonings

    In a large bowl, combine the pork and beef sausages. Add paprika, cayenne pepper, black pepper, garlic powder, onion powder, salt, and sugar. Mix thoroughly until the spices are evenly distributed.

    Add Ice Water

    Slowly incorporate the ice water into the meat mixture. Mix until the mixture is sticky and well combined.

Stuffing

    Prepare Stuffing Equipment

    Fit a sausage stuffer with a rinsed hog casing. Tie a knot at the end of the casing.

    Stuff the Sausages

    Carefully fill the casing with the meat mixture, ensuring there are no air pockets. Twist sausages into links of your desired size, and tie off the ends.

Cooking

    Preheat a grill or stovetop pan over medium-high heat. Cook the hot links for about 15-20 minutes, turning occasionally until they are nicely browned and have reached an internal temperature of 75°C (165°F).
