    Prepare the Green Beans

    Wash the fresh green beans and trim the ends. Cut them into 1-inch pieces.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Add the sliced mushrooms and continue to sauté for another 5 minutes.

    Combine Ingredients

    Add the trimmed green beans to the skillet along with the vegetable broth, soy sauce, salt, and black pepper. Stir well to combine all the ingredients.

Baking

    Transfer to Baking Dish

    Preheat your oven to 180°C (350°F). Transfer the green bean mixture to a greased 2-quart baking dish, spreading it evenly.

    Prepare the Topping

    In a small bowl, mix together the French fried onions, panko breadcrumbs, and grated Parmesan cheese. Sprinkle this mixture evenly over the top of the casserole.

    Bake the Casserole

    Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and crispy.

    Garnish and Serve

    Remove the casserole from the oven, let it cool for a few minutes, then garnish with chopped parsley before serving.
