Method

Meats

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Place the chicken thighs in a baking dish and drizzle with 2 tablespoons of olive oil. Season with salt, black pepper, and garlic powder.

  2. 2

    Cook the Chicken

Bake the chicken thighs in the preheated oven for 35-40 minutes or until the internal temperature reaches 165°F (75°C).

  3. 3

    Prepare the Pork

While the chicken is baking, season the pork tenderloin with the remaining olive oil, salt, and pepper. Heat a skillet over medium-high heat and sear the pork on all sides until browned.

  4. 4

    Finish the Pork

Transfer the pork to the oven alongside the chicken and roast for 20-25 minutes or until its internal temperature reaches 145°F (63°C). Let it rest for 5-10 minutes before slicing.

Sides

  1. 5

    Prepare the Potatoes

Peel and dice the potatoes into uniform chunks. Place them in a pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.

  2. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add 2 tablespoons of butter, lemon juice, salt, and pepper. Mash until smooth and creamy.

  3. 7

    Prepare the Green Beans

While the potatoes are cooking, trim the ends of the green beans. In the same skillet used for the pork, add the green beans and a splash of water. Cover and steam for about 5-7 minutes until bright green and tender.

  4. 8

    Finish the Green Beans

Remove the lid and let the water evaporate. Drizzle with a little olive oil, season with salt, and sauté for another 2-3 minutes until they are nicely coated.
