Method

Meats Preparation

  1. 1

    Marinate Chicken Thighs

In a large bowl, combine the boneless chicken thighs with half of the olive oil, 1 tsp salt, 1/2 tsp black pepper, and garlic powder. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.

  2. 2

    Prepare Pork Tenderloin

Rub the pork tenderloin with the remaining olive oil, salt, and black pepper. Place in a baking dish and cover with foil. This can be done while the chicken is marinating.

  3. 3

    Cook Chicken

Preheat the oven to 400°F (200°C). Place the marinated chicken thighs on a baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).

  4. 4

    Cook Pork Tenderloin

While the chicken is baking, place the covered pork tenderloin in the oven and bake for 25-30 minutes. Remove the foil for the last 10 minutes to brown the top.

Sides Preparation

  1. 5

    Prepare Potatoes

Wash and peel the potatoes. Cut them into quarters and place them in a pot with salted water. Boil for 15-20 minutes, or until fork-tender.

  2. 6

    Mash Potatoes

Drain the potatoes and return them to the pot. Add butter, lemon juice, and the remaining salt and pepper. Mash until creamy and smooth.

  3. 7

    Prepare Green Beans

Trim the ends of the green beans and rinse them under cold water. Bring a pot of water to a boil and blanch the green beans for 3-4 minutes until vibrant green.

  4. 8

    Sauté Green Beans

Drain the green beans and heat a skillet over medium heat. Add a splash of olive oil and sauté the green beans for an additional 5 minutes, seasoning with salt and pepper.
