Season the Brisket
In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub this spice mixture all over the brisket, ensuring an even coating.

Cook the Brisket
Place the seasoned brisket in a slow cooker or smoker. If using a slow cooker, add the beef broth. Cook on low for 8-10 hours until the brisket is tender and easily pulls apart. If using a smoker, smoke at 225°F for about 6-8 hours, spraying with apple juice every hour.

Rest the Brisket
Once cooked, remove the brisket from the heat and let it rest for at least 30 minutes before slicing.

Slice the Brisket
Using a sharp knife, slice the brisket against the grain into thin slices for optimal tenderness.

Prepare the Buns
While the brisket is resting, slice the brioche buns in half and toast them lightly on a skillet or in an oven until golden brown.

Complete the Sandwich
Top each sandwich with the other half of the toasted brioche bun. Press down gently to secure.

Cut the sandwiches in half if desired and serve immediately with extra BBQ sauce on the side.
