Preparing the Short Ribs

    Season the Ribs

    Start by seasoning the beef short ribs with salt and black pepper on all sides. Let them sit at room temperature for about 30 minutes.

    Sear the Ribs

    In a large heavy pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the short ribs and sear them for 3-4 minutes on each side until browned. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow the wine to reduce for about 5 minutes.

    Add Broth and Herbs

    Add the beef broth, fresh thyme, and bay leaves into the pot. Stir to combine.

    Return Ribs and Simmer

    Return the seared short ribs to the pot. Bring to a boil, then reduce the heat to low, cover, and let simmer for 2.5 to 3 hours until the ribs are tender.

    While the ribs are cooking, prepare the mashed potatoes. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
