Fried Green Tomatoes

Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Lay them out on a paper towel and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.

Set Up Breading Station
In a shallow bowl, place the all-purpose flour. In a second bowl, pour the buttermilk. In a third bowl, add the cornmeal, black pepper, and cayenne pepper and mix well.

Bread the Tomatoes
Dredge each tomato slice in flour, then dip it in buttermilk, and finally coat it with the cornmeal mixture. Press the cornmeal onto the tomatoes to ensure it sticks.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.

Make the Spicy Aioli
In a bowl, combine mayonnaise, garlic powder, sriracha sauce, and lemon juice. Mix well until smooth. Adjust seasoning to taste.

Serve the fried green tomatoes hot with a side of spicy aioli for dipping.
