1. Melt the chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let cool slightly.

2. Whip the cream

In a separate bowl, whip the heavy cream until soft peaks form. Set aside in the refrigerator.

3. Prepare the egg mixture

In another bowl, separate the egg yolks and whites. Whisk the egg yolks with granulated sugar and vanilla extract until pale and thick.

4. Combine chocolate and egg yolks

Fold the melted chocolate into the egg yolk mixture until well combined.

5. Beat the egg whites

In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

6. Fold in the mixtures

Gently fold the whipped cream into the chocolate mixture, then carefully fold in the beaten egg whites until no streaks remain.

7. Chill

Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

8. Serve
