    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let cool slightly.

    Make the cheesecake filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar and continue mixing until well incorporated. Add vanilla extract and sour cream, mixing until combined. Add eggs one at a time, mixing just until blended.

    Bake the cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes or until the center is set and slightly jiggles. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and refrigerate

    Remove the cheesecake from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
