Pretzel Dough

Method

Making the Pretzels

  1. 1

    Prepare the Dough

In a large bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes until foamy. Add flour and salt, mix until a dough forms.

  2. 2

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

  3. 3

    Shape the Pretzels

Preheat the oven to 450°F (230°C). Divide the dough into 8 pieces, roll each into a rope, and shape into a pretzel.

  4. 4

    Prepare the Baking Soda Bath

In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for about 30 seconds, then place on a baking sheet lined with parchment paper.

  5. 5

    Bake the Pretzels

Brush each pretzel with egg yolk and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
