Fried Ravioli and Mushroom Chicken Choron Sauce

Preparation and Cooking

Prepare the Ravioli

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each ravioli first in the flour, then in the egg, and finally in the breadcrumbs to coat.

Fry the Ravioli

In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded ravioli in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels. Season with salt.

Prepare the Mushroom Chicken Choron Sauce

In another skillet, melt butter over medium heat. Add minced garlic and mushrooms, sauté until mushrooms are soft. Add diced chicken and cook until browned and cooked through.

Make the Sauce

Pour in white wine and let it reduce by half. Then add heavy cream, tomato paste, salt, and black pepper. Stir well and simmer for 5 minutes until the sauce thickens. Adjust seasoning to taste.

Serve

Plate the fried ravioli and drizzle the mushroom chicken choron sauce over the top. Garnish with fresh parsley and serve immediately.
