Cook the Penne

Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to package instructions. Drain and set aside.

Sauté the Sausage

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the Italian sausage and cook until browned and cooked through, breaking it up with a spoon as it cooks.

Combine Ingredients

Stir in the roasted red peppers and marinara sauce into the sausage. Season with salt and black pepper. Let it simmer for about 5 minutes.

Mix Pasta and Cheeses

In a large mixing bowl, combine the cooked penne pasta, ricotta cheese, and half of the mozzarella cheese. Pour the sausage and sauce mixture over the pasta and mix until well combined.

Assemble the Dish

Transfer the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.

Bake the Pasta

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve

Remove from the oven and let it sit for a few minutes. Garnish with fresh chopped basil before serving.
