Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine 1 cup of jasmine rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 5 minutes before fluffing with a fork.

Stir Fry the Vegetables
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chopped onions and sauté for 2-3 minutes until they start to become translucent. Add the mushrooms, broccoli, and zucchini, and continue to sauté for another 5-7 minutes until the vegetables are tender.

Add Sauce and Serve
Stir in the teriyaki sauce and grated ginger, mixing well to coat the vegetables. Cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste. Serve the stir fry over the cooked jasmine rice.
