Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). In a shallow dish, mix the parmesan cheese and bread crumbs together. Dredge the chicken breasts in the mixture until fully coated.
- 2
Sauté the Chicken
In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the breaded chicken and sauté for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 3
Deglaze the Pan
In the same skillet, add the white wine and lemon juice. Scrape up any bits stuck to the bottom of the pan. Let it simmer for about 2 minutes.
- 4
Cook the Linguini
While the chicken is cooking, boil a pot of salted water and cook the linguini according to package instructions until al dente. Drain and set aside.
- 5
Combine and Serve
Return the chicken to the skillet with the wine and lemon mixture. Toss the cooked linguini in the skillet to coat. Serve the linguini on plates, top with crab meat, and drizzle with béarnaise sauce. Pair with your choice of two sides.
