    Prepare the Potatoes

    Wash and bake the potatoes in a preheated oven at 400°F (200°C) until tender, about 45 minutes. Once cooled, scoop out the insides and set aside.

    Sauté the Aromatics

    In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

    Combine Ingredients

    Add the baked potato insides, chicken or vegetable broth, heavy cream, salt, and pepper to the pot. Stir well and bring to a simmer.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave some chunks.

    Serve

    Ladle the soup into bowls and top with crispy bacon, shredded cheddar cheese, and fresh chives. Enjoy your rich, creamy baked potato soup!
