Prepare the Prime Rib
Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, salt, black pepper, garlic powder, and onion powder. Place the roast in a roasting pan, bone side down, and roast for 20 minutes.

Slow Roast
Reduce the oven temperature to 325°F (163°C) and continue to roast for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (medium-rare is about 135°F / 57°C).

Rest and Slice
Remove the prime rib from the oven and let it rest for at least 20 minutes before slicing thinly against the grain.

Prepare the Au Jus
While the meat rests, heat the beef broth in a saucepan over medium heat. Add drippings from the roasting pan, if available, to enhance the flavor. Simmer for 10 minutes.

Assemble the Sandwich
Slice the hoagie rolls and layer with the sliced prime rib and Swiss cheese. Optional: briefly toast the assembled sandwiches in a pan or under a broiler until the cheese is melted and the bread is warm.

Serve the sandwiches with a side of au jus for dipping and creamy horseradish sauce on the side, if desired.
