    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly. Prick each potato several times with a fork.

    Bake the Potatoes

    Place the potatoes on a baking sheet and bake for about 45-60 minutes or until tender. Remove from the oven and let cool slightly.

    Scoop and Season

    Once the potatoes are cool enough to handle, slice them in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides with olive oil and season with salt and black pepper.

    Add Cheese and Bacon

    Sprinkle the shredded cheddar and Monterey Jack cheeses into the potato skins, then add the chopped bacon on top.

    Bake Again

    Return the loaded potato skins to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and sprinkle chopped chives on top. Serve hot with sour cream on the side.
