Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the potato strips in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt while hot.

Make the Tempura Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually add the cold water, stirring until just combined. The batter should be slightly lumpy.

Prepare the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the tempura batter, ensuring they are well-coated.

Fry the Fish
In the same hot oil used for the fries, carefully place the battered fish fillets. Fry for about 4-5 minutes or until the batter is golden brown and the fish is cooked through. Remove and drain on paper towels.

Plate the fish and chips together, and serve with house slaw and key lime tartar sauce on the side, if desired.
