Prepare the Tempura Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, and cold water until smooth. The batter should be light and slightly thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Dip and Fry the Chicken
Dip each chicken tender into the tempura batter, ensuring it is fully coated. Carefully place the battered chicken into the hot oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Glaze the Chicken
Once all the chicken is fried, transfer them to a large bowl and pour the Pacific Rim sauce over the hot chicken. Toss to coat evenly.

Serve the Dragon Tails with a side of blue cheese dressing and celery sticks for dipping.
