Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, mix together the flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Soak in Buttermilk
Place the dried calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for about 30 minutes.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Coat the Calamari
Remove the calamari from the buttermilk and allow the excess to drip off. Dredge the rings in the flour mixture until well coated.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Serve
Serve the crispy calamari hot with lemon wedges on the side and your choice of dipping sauce.
