    Prepare the Onions

    Slice the yellow onions thinly and set aside.

    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add Garlic and Spices

    Add minced garlic, thyme, bay leaf, salt, and black pepper to the pot. Cook for an additional 2-3 minutes until fragrant.

    Deglaze with Irish Stout

    Pour in the Irish stout and scrape up any browned bits from the bottom of the pot. Cook for about 5 minutes to reduce slightly.

    Add Broth

    Add the beef broth to the pot and bring to a simmer. Allow it to simmer for about 20 minutes to develop flavors.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into 1-inch thick slices and toast them until golden brown.

    Assemble and Serve

    Ladle the soup into bowls, place a slice of toasted baguette on top, and sprinkle with Gruyère cheese. Broil in the oven until the cheese is melted and bubbly, about 2-3 minutes. Serve hot.
