Brewing Directions

1. Mashing the Grains

In a large brew kettle, heat 5 liters of water to 68°C (155°F). Add the pale malt and wheat malt, stirring well. Maintain this temperature for 60 minutes.

2. Boiling the Wort

After mashing, raise the temperature to a boil. Once boiling, add Hallertau hops and boil for 60 minutes.

3. Cooling the Wort

After the boiling process, cool the wort quickly to around 20°C (68°F). You can use a wort chiller for this step.

4. Fermentation

Transfer the cooled wort to a sanitized fermenter. Sprinkle the yeast on top and seal the fermenter. Allow it to ferment at around 20°C (68°F) for about 1-2 weeks.

5. Bottling

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the fermenter. Bottle the beer using sanitized bottles and caps.

6. Conditioning

Let the bottles sit at room temperature for another 1-2 weeks to carbonate. After that, refrigerate and enjoy your Ayinger Brauweisse!
