Brewing Directions
1. Mashing
Heat 6 liters of water to 70°C (158°F). Add the wheat malt, pilsner malt, and flaked corn. Maintain the temperature for 60 minutes.
2. Lautering
After mashing, drain the liquid (wort) into another vessel. Sparge the grains with hot water to extract more sugars.
3. Boiling
Bring the wort to a boil. Add Hallertau hops and boil for 60 minutes. In the last 15 minutes of the boil, add coriander seeds and sweet orange peel.
4. Cooling
Cool the wort quickly to about 20°C (68°F) using a wort chiller.
5. Fermentation
Transfer the cooled wort into a fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment for 1 to 2 weeks at 18-22°C (64-72°F).
6. Bottling
Once fermentation is complete, bottle the beer with a priming sugar solution to carbonate. Allow it to condition for another 1-2 weeks.
