American Pale Wheat. Crisp wheat smoothness gives way to a touch of coriander snap and a dash of sweet orange.

In a large pot, heat 3 gallons of water to about 165°F (74°C). Add the wheat malt and pilsner malt, stirring well. Maintain a temperature of 152°F (67°C) for 60 minutes. This process converts the starches in the grains to sugars.

Mashing

After mashing, sparge (rinse) the grains with an additional 2 gallons of hot water to extract as much sugar as possible. Collect the wort in a kettle.

Sparging

Bring the wort to a boil and add the hops. Boil for 60 minutes, adding coriander seeds and sweet orange peel during the last 10 minutes.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Allow to ferment at room temperature for 1-2 weeks.

Fermentation

After fermentation is complete, siphon the beer into sanitized bottles, adding priming sugar if desired for carbonation. Cap the bottles and let them condition for another 1-2 weeks.
