Prepare the Apples
Wash and core the fresh apples, then chop them into small pieces. Place the chopped apples into a large pot.

Add Water and Heat
Pour 2 cups of water over the chopped apples and bring the mixture to a boil. Reduce heat and let simmer for 30 minutes.

Strain the Mixture
Once the apple mixture has simmered, strain it through a fine mesh sieve or cheesecloth into a large bowl, pressing the solids to extract as much juice as possible.

Fermentation Process
Return the strained juice to the pot. Add sugar, yeast, lemon juice, cinnamon sticks, and cloves. Stir well. Cover the pot with a clean towel and let it sit at room temperature for 7-10 days to ferment.

Aging
Store the bottles in a cool, dark place for at least 2 weeks to allow the flavors to meld and develop.
