Pretzel Preparation

Activate Yeast
In a large bowl, combine warm water, active dry yeast, and sugar. Let it sit for about 5-10 minutes until foamy.

Make Dough
Add flour and salt to the yeast mixture. Stir until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

Shape Pretzels
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, then shape into a pretzel.

Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and drain.

Egg Wash and Salt
Place the pretzels on the prepared baking sheet. Brush each pretzel with beaten egg and sprinkle with coarse sea salt.

Bake in the preheated oven for 12-15 minutes, or until golden brown.
