Frying and Garnishing

Prepare the Calamari
In a large bowl, mix together the flour, cornstarch, salt, black pepper, and cayenne pepper. Toss the calamari rings in the mixture until they are evenly coated.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Make the Lemon Beurre Blanc Sauce
In a small saucepan, combine lemon juice and butter over low heat, whisking until the butter is melted and the sauce is well combined. Keep warm.

Plate and Garnish
Serve the fried calamari garnished with sliced red onion and diced tomatoes. Drizzle the lemon beurre blanc sauce over the top.
