Prepare the Prime Rib
Preheat your oven to 325°F (165°C). Season the prime rib with salt, black pepper, garlic powder, and onion powder. Rub the olive oil over the meat and place it on a roasting pan. Roast for approximately 1.5 to 2 hours for medium-rare, or until it reaches your desired doneness.

Rest the Meat
Once cooked, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This helps retain the juices.

Slice the Prime Rib
Thinly slice the prime rib against the grain using a sharp knife.

Assemble the Sandwich
Cut the ciabatta buns in half. Layer the bottom half with sliced prime rib, then add the roasted red peppers, roasted onions, and top with Swiss cheese. Place the top half of the bun on the sandwich.

Prepare the Au Jus
In a small saucepan, heat the beef broth until warm. This will be served on the side for dipping.

Serve the sandwiches with a small bowl of warm au jus on the side for dipping.
