Prepare the Filling
In a large bowl, combine the ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until combined.

Fill the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the pork mixture in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal. Repeat until all filling is used.

Cook the Potstickers
In a large skillet, heat the vegetable oil over medium-high heat. Arrange the potstickers in a single layer in the skillet and cook for 2-3 minutes until the bottoms are golden brown.

Steam the Potstickers
Carefully pour in 1 cup of water into the skillet and cover immediately with a lid. Let the potstickers steam for about 5-7 minutes until cooked through.

Serve
Remove the lid and let any remaining water evaporate. Serve hot with your favorite dipping sauce.
