Prepare the Onions
Slice the onion into thin rings. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions and cook until they are caramelized, about 10-15 minutes, stirring occasionally.

Cook the Beef Patties
In a bowl, season the ground beef with salt and black pepper. Divide the beef into 2 equal portions and shape them into patties. In another skillet, melt the remaining tablespoon of butter over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

Assemble the Patty Melt
Spread 1 tablespoon of 1000 Island dressing on one side of each slice of rye bread. Place one slice, dressing side down, in a skillet. Top with a cooked patty, a slice of Swiss cheese, and half of the caramelized onions. Place another slice of rye bread on top, dressing side up.

Toast the Sandwich
Cook the sandwich on medium heat for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Repeat the process for the second sandwich.

Serve
Remove from the skillet, cut in half, and serve warm with extra 1000 Island dressing on the side if desired.
